Taste The Rainbow Popsicles

As a dietitian I talk a lot about ‘eating a rainbow’, but I don’t know if I’ve ever taken it so literally!  St. Patrick’s Day is the PERFECT occasion to make these super cool popsicles, but they will be a hit at any time of the year! The best part is that I didn’t even have to add any sugar, the fruit did the work, making them extremely healthy.  It’s a bit of a process as ideally you need to freeze the mixture before adding the next layer, but well worth the work I promise.  You will need about one cup of fruit for each layer, depending on how big your popsicle forms are.  I had a bit extra left over from mine.  Do your best to not overfill each layer as you need to accommodate all of the colours.  I confess, I did this the first time.

There is no blue fruit (blueberries do not puree into blue, I found this out), so I added a drop of food blue food colouring to a pureed banana to get my blue layer.  If you want to avoid food colouring I would suggest just leaving out that layer.  Pretty sure nobody will notice!  You will need the following equipment to make these:

Healthy St Patricks Day Rainbow Popsicles

Ingredients:
Violet Layer: 1 c. blueberries
Blue Layer: 1 large banana + 2 drops blue food colouring
Green Layer: 2 kiwi fruits, peeled (you can add a handful of kale to get it extra green)
Yellow Layer: 1 c. pineapple chunks
Orange Layer: 1 c. peeled peaches (fresh or frozen, canned will also work)
Red Layer: 1 c. strawberries (fresh or frozen)

Directions:

  1. In a small blender or ‘Magic Bullet’ type of appliance, puree each layer of fruit separately with a bit of water (a couple of tablespoons is what I used) to thin the fruit mixture.  This makes each layer easier to pour into the popsicle forms through a funnel.  Rinse the blender between each layer.  Place each separately pureed fruit layer in a cup or other small container.
  2. Once each layer is pureed, pour a small amount of your blueberries (start with violet, the amount depends on the size of your popsicle form) into each form using a small plastic funnel if you want the layers to be perfect and not get on the sides.  You will likely need about 1-2 Tbsp. for each layer.  Be careful not to overfill as you will otherwise not have room for each of the colours!  Freeze the partly filled form for about 20 minutes before adding the next layer in the rainbow as per above.  Once the second layer is added, place your popsicle sticks in the slots so that they freeze upright in the popsicles, and repeat with the rest of the layers, freezing after each addition, until they are all added.
  3. Freeze for an additional hour and serve when you wish!
