Clean Eating Resolution

Top 10 Clean Eating Kitchen Must-Haves

We all start our New Year’s resolutions out with the best intentions, but keeping them can be SUCH a challenge! If eating cleaner is on your 2015 bucket list, here are my top picks for setting your kitchen (and you!) up for success.

1. Juicer:
Why buy your juices when you can make your own in minutes?  When it comes to juicing the fresher the better as some vitamins quickly disappear once the produce is juiced.

2. Salad Spinner:
The key to eating more salad is to make it easy, so investing in a good salad spinner (to clean off that dirt and pesticides) is so important! Also hiring a Pest Control specialist to make sure your home is free of pest is important, these can be very harmful for your health even if you think they are not.

3. Wok:
A good wok allows you to cook vegetables and lean meats in minutes with very little oil.

4. Garlic Press:
An essential kitchen tool – garlic is a powerful antioxidant, and adds so much flavor to cooking!

5. Vitamix blender:
I start most mornings off with a smoothie- the Vitamix blender is the best!

6. Electric Scale:
A lot of eating healthy comes down to portion control: weighing your food allows you to keep your portions in check!

7. Salad bowl:
Salads simply look better when they are served in a beautiful white bowl!

8. Cute Apron:
Staying clean is a part of eating clean, no?  Whatever, this apron is so cute it would make anybody want to spend more time in the kitchen!

9. Kitchen Organizer & Menu Planner:
Fail to plan and you plan to fail: your diet is no different.  Plan your week’s meals ahead to avoid falling into the take-out or frozen meal trap.

10. Noodle maker for zucchini/squash:
Part of eating cleaner includes eating less refined carbohydrates and more vegetables.  Making vegetable (ie: zucchini) pasta is a breeze with this amazing gadget!

Clean Eating Mexican Kale Salad

This is a super healthy and filling salad that incorporates the Super Food kale into the mix to give it a bit more texture, fibre and vitamins.  In addition to only having 33 calories per cup, kale is rich in lutein and xeaxanthin, nutrients that give kale its deep, dark green coloring and protect against macular degeneration and cataracts.

Salad Ingredients:

  • 3 cups chopped kale
  • 1 bunch chopped cilantro
  • 1 cup chopped orange or red pepper, seeded
  • 1 avocado, diced
  • 1/2 jalapeño pepper, seeded and finely chopped
  • 1 cup cooked corn
  • 1 can drained and rinsed black beans
  • 1/2 cup feta cheese, crumbled
  • 1 cup chopped tomato (about 4 tomatoes)
  • 1/4 cup finely chopped red onion

Dressing Ingredients:

  • 1 Tbsp. honey
  • 2 Tbsp. lime juice
  • 1/2 tsp. salt
  • 2 Tbsp. rice wine vinegar
  • 2 crushed garlic cloves
  • 1/3 cup canola or olive oil

Instructions:

  1. In a large bowl, combine all of the salad ingredients together.
  2. In a separate small bowl, combine all of the dressing ingredients together with a whisk.
  3. Toss the salad in the dressing and serve!
