Vegan Monster Sub


If you tell your guy you’re making him a vegan sub chances are he’s not going to be overly excited about it (I know this from experience LOL!!) BUT if you tell your guy you’re making him a MONSTER sub and you serve him this … he’ll lose his mind!! I mean, they don’t need to know it’s vegan!! We can keep some things to ourselves, right ladies?! LOL! I mean, fair enough … when someone who isn’t vegan thinks about a vegan sub they automatically assume it is going to be boring and dry. Welp. That’s not the case here!

The key to a good vegan sub is LOTS of spreads and sauces!! Fill that baby up!! LOL! We’re a saucy kind of home so we like to load our sandwiches up with tons of hummus, spreads, lots of creamy vegan cheeses, etc! Basically any sauces you have in your fridge just go all out and load them on there!!

Some of my favourite sauces and spreads include:

In addition to the staple ingredient that’ll have you lickin’ those fingers clean … you’re also going to want to add some roasted veggies (I LOVE roasted peppers and tomatoes!), most definitely some pickled veggies like jalapenos, beets, pickles (of course) and then top it off with some fresh veggies like shredded lettuce, onion, avocado, etc!

On this particular Monster Vegan Sub we used the following …

SAUCES (Start by adding these on to your fresh baguette … I use half a baguette for one sub!):

FRESH VEGGIES/PICKLED VEGGIES (layer these on top of the sauces):

  • Roasted red peppers
  • Sliced onion
  • Sliced avocado
  • Grated carrots
  • Fresh arugula
  • Pickled banana peppers
  • Roasted (or fried!) then sliced portabello mushroom

MORE TOPPINGS! (These you’ll want to put on last, just before you serve it!):

  • Olive oil
  • White or red wine vinegar
  • Salt & pepper

If you’re wondering why you would top the sub off with olive oil and white/red wine vinegar … just trust me … it makes the sub taste like an authentic Italian sub this way and it’s soooo damn tasty!!

  1. This looks amazing! Question on the spreads, do you spread two spreads on one side of the sub, one on top of the other (for example, cream cheese spread topped with the Caesar spread)? I’m just a little confused with three spreads being listed! Thanks for sharing 🙂

  2. I always put hummus on my sammies! Haha and home made guac (if not using whole avocado) I think artichoke hearts, sundried tomatoes and or steamed kale would also be amazing!!! Aaaaand now I’m hungry lol

  3. I’m loving all the vegan / plant-based content! As a fellow vegan myself, I love all the inspo!

    I’m a sucker for cucumbers added to subs, they add such a fresh burst — It would be great on this sub! You’re bang on with the red wine vinegar and oil being added, they add the perfect authentic touch. I always like to add a quick sprinkle of oregano with the vinegar and oil to add that extra “Italian dressing” style flair!

  5. Hello Jill team! I have a question.. i love the idea of becoming vegan, however I need to be watching my carbs, and most of the recipes I see cones with bread and pasta. I don’t exercise so I want to mantain my weight with a low carb diet, do you have any recipes for people like me? Another question is.. I used to do my groceries at Whole foods.. and THaT was expensive!! Do you have any tricks to save buying all of this vegan products? Love your site! Athenas!
