Captain’s Kale Caeser Salad

JillianDinner, Food, Lunch4 Comments

Being on my New Years health kick and with my Scrub Captain away this week… I recently made his almost famous Kale Caeser Salad in his honour. We should seriously be copy righting this dressing….it’s that good!!! So shhhhhhh…don’t tell anyone!!! It took enough convincing to be able to share it with YOU!!! I hope you enjoy it as much as we do…..

(Makes 2-3 servings)

1/4 cup Olive oil
1 tbsp White wine vinegar
2 tsp Dijon mustard
2 tsp Anchovy paste
1/2 tsp Worcestershire
2 Cloves garlic minced
2 tbsp Grated parm
2 tbsp Miracle Whip
1 full lemon squeezed
Salt & Pepper

Kale – this NEEDS to be on kale!
MORE Parmesan Cheese

  1. Dressing – mix and shake all liquid ingredients (including anchovy paste and garlic). Once all liquids are mixed add S&P, grated parm and mayo. I add the lemon juice and a tinch more vinegar at the very end so I can control the citrusy taste I want and extra added volume.
  2. Bacon – get the good UNCUT stuff and cut it into cubes and fry for quick juicy bacon bits.
  3. Croutons – take a loaf of uncut sourdough, rip it into tiny pieces (so much more rustic this way), toss in a bit of olive oil salt and pepper and bake until brown.
  4. Serve it all together, top with a generous dose of parmesan cheese, and you’ve got yourself YUM YUM MIND BLOWING YUUUUUMMMM!

Oh my goodness! I saved this recipe months ago and finally got around to making it. Best caesar salad EVER! I didn’t have anchovy paste, so I added whole anchovies and mixed the dressing with my immersion blender at the end. Perfection! Thanks Jillian and Justin for sharing!

  • I am literally eating this right now. It is so good !!

Made this finally tonight – had to leave out the parm and croutons because we’re on Day 28 of Whole30 but it was still delish! Added caper to dressing too, because #givemeallthecapers.
